Dominican Pink Potato Salad

A delicious Dominican Style potato salad known as "pink potato salad" for its color from beets and also sometimes called ensalada rusa.

Ingredients
  

  • 4 potatoes
  • 2 carrots
  • 2 eggs
  • 1/2 red onion
  • 1/2 c vinegar
  • 1 tbs salt
  • 1 cup mayo
  • 1/2 can beets and some reserved beet juice

Instructions
 

  • to boiling water add largely cut potatoes and carrots 20 min
  • add eggs 10 more min do not overboil the carrots or potatoes they should be fork tender but not mush
  • dice onion and add to a bowl with salt and vinegar let sit
  • dice the boiled potatoes and carrots
  • add the onions and some of the vinegar
  • add beet juice
  • add beets and mayo and more salt if needed
