Dominican Pink Potato Salad
A delicious Dominican Style potato salad known as "pink potato salad" for its color from beets and also sometimes called ensalada rusa.

- 4 potatoes
- 2 carrots
- 2 eggs
- 1/2 red onion
- 1/2 c vinegar
- 1 tbs salt
- 1 cup mayo
- 1/2 can beets and some reserved beet juice
to boiling water add largely cut potatoes and carrots 20 min
add eggs 10 more min do not overboil the carrots or potatoes they should be fork tender but not mush
dice onion and add to a bowl with salt and vinegar let sit
dice the boiled potatoes and carrots
add the onions and some of the vinegar
add beet juice
add beets and mayo and more salt if needed
