Dominican Pink Potato Salad
A delicious Dominican Style potato salad known as "pink potato salad" for its color from beets and also sometimes called ensalada rusa.
Ingredients
- 4 potatoes
- 2 carrots
- 2 eggs
- 1/2 red onion
- 1/2 c vinegar
- 1 tbs salt
- 1 cup mayo
- 1/2 can beets and some reserved beet juice
Instructions
- to boiling water add largely cut potatoes and carrots 20 min
- add eggs 10 more min do not overboil the carrots or potatoes they should be fork tender but not mush
- dice onion and add to a bowl with salt and vinegar let sit
- dice the boiled potatoes and carrots
- add the onions and some of the vinegar
- add beet juice
- add beets and mayo and more salt if needed
