Maruya aka Filipino Banana Fritters

A delicious Filipino breakfast fritter pancakes that are sure to fill any sweet tooth.

Ingredients
  

  • 7-8 saba (or el nido) bananas
  • 1 cup flour
  • ½ cup sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 egg
  • ½ cup milk
  • 1 tsp vanilla

Instructions
 

  • In a bowl, mash 7-8 saba bananas.
  • In a bowl, combine dry ingredients (flour, salt, baking powder, and sugar)
  • In another bowl, beat one egg, and add milk and vanilla. Then whisk in to the dry ingredients.
  • Fold in the bananas using a spatula. Batter should be thick and not runny.
  • In a large pan, add vegetable oil and heat up.
  • Pour about 1/4 cup of the batter into hot oil and fry until golden then flip and finish frying.
  • While hot, sprinkle some sugar. Optional: in a small plate add sugar and put the fritter flipping it back and forth to fully coat.
