Preheat the oven to 400°F.
Wash the chicken with vinegar and allow it to soak for a few minutes.
Pat the chicken dry, spatchcock it so it lies flat, and poke holes throughout the chicken.
In a bowl, combine all the marinade ingredients except the sazón packet.
Rub the marinade thoroughly over the chicken and into all the holes.
Sprinkle the sazón over the top of the chicken and rub it in slightly. This will give the chicken great color.
Cover and bake at 400°F for 1½ hours.
Uncover, increase the oven temperature to 450°F, and bake for another 1½ hours, basting every 30 minutes.
Broil for the final 10 minutes, watching carefully so the skin does not burn.
Check that the thickest parts of the chicken have reached at least 165°F before removing it from the oven. Let it rest before carving.
