Ingredients

  • 1 tbs ranchero
  • 1 tbs sofrito
  • ½ tbs lawrys
  • ½ tbs adobo con sazon
  • ½ tbs dominican oregano
  • 1 tsp cumin
  • ½ tbs onion powder
  • ½ tbs garlic powder
  • 1 tsp garlic pepper
  • 1 packet sazon
  • 1 lime juiced
  • ½ sour orange juiced
  • Olive oil
  • Whole chicken

Instructions

  • Preheat the oven to 400°F.
  • Wash the chicken with vinegar and allow it to soak for a few minutes.
  • Pat the chicken dry, spatchcock it so it lies flat, and poke holes throughout the chicken.
  • In a bowl, combine all the marinade ingredients except the sazón packet.
  • Rub the marinade thoroughly over the chicken and into all the holes.
  • Sprinkle the sazón over the top of the chicken and rub it in slightly. This will give the chicken great color.
  • Cover and bake at 400°F for 1½ hours.
  • Uncover, increase the oven temperature to 450°F, and bake for another 1½ hours, basting every 30 minutes.
  • Broil for the final 10 minutes, watching carefully so the skin does not burn.
  • Check that the thickest parts of the chicken have reached at least 165°F before removing it from the oven. Let it rest before carving.
