Orange Olive Oil Cake

A simple and delicious recipe for Orange Olive Oil Cake that is sure to be a crowd pleaser.

Ingredients
  

  • 2 oranges juiced and zested (may need one more for glaze)
  • 1 ¼ cups sugar
  • 4 eggs
  • 2 tsp leivito (paneangeli) or can use baking powder
  • ½ tsp salt
  • 2 cups flour
  • 3 eggs
  • cup ricotta

Instructions
 

  • Preheat oven to 325
  • Grease and flour bundt pan
  • Zest two oranges and set zest aside.
  • Juice oranges set aside 1 cup of juice for the cake batter, leave the remaining aside for glaze.
  • In Mixing bowl, add sugar and zest. Massage the zest into the sugar to activate the fragrance.
  • Add the remaining dry ingredients - flour, salt, and leivito.
  • In another bowl, mix the wet ingredients - eggs, ricotta, orange juice, and olive oil and mix.
  • Add wet ingredients to the dry and mix till combined.
  • Pour into pan and then bake for 50 min - 1 hour
  • Let cool and garnish powdered sugar and orange juice glaze mix. If you have any zest left decorate with the zest
