Orange Olive Oil Cake

A simple and delicious recipe for Orange Olive Oil Cake that is sure to be a crowd pleaser.
Course Dessert

Ingredients
  

  • 2 oranges juiced and zested (may need one more for glaze)
  • 1 ¼ cups sugar
  • 4 eggs
  • 2 tsp leivito (paneangeli) or can use baking powder
  • ½ tsp salt
  • 2 cups flour
  • 3 eggs
  • cup ricotta

Instructions
 

  • Preheat oven to 325
  • Grease and flour bundt pan
  • Zest two oranges and set zest aside.
  • Juice oranges set aside 1 cup of juice for the cake batter, leave the remaining aside for glaze.
  • In Mixing bowl, add sugar and zest. Massage the zest into the sugar to activate the fragrance.
  • Add the remaining dry ingredients – flour, salt, and leivito.
  • In another bowl, mix the wet ingredients – eggs, ricotta, orange juice, and olive oil and mix.
  • Add wet ingredients to the dry and mix till combined.
  • Pour into pan and then bake for 50 min – 1 hour
  • Let cool and garnish powdered sugar and orange juice glaze mix. If you have any zest left decorate with the zest

Baking?

Experimenting with baking even though it isn’t always my strong suit. Baking can be intimidating when everyone says it is a specific science, and while in most cases this is true, this cake is pretty forgiving. I have made it a couple of times and made mistakes multiple times and guess what it’s still delicious, not overly sweet, and great for days. As always, full recipe is on the blog!
