Bolognese Sauce

Bolognese Sauce

A hearty, rich, and delicious recipe for Bolognese Sauce.

Ingredients
  

  • Knob of butter
  • Olive oil
  • Carrots celery and onion
  • Italian seasoning
  • Pepper
  • Salt
  • Tomato paste
  • Red wine
  • Beef
  • Sausage
  • Passata
  • Splash of milk or cream
  • Cheese
  • Butter

Instructions
 

  • In a large pot, add a knob of butter and a drizzle of olive oil.
  • Add your italian sofrito – carrots, celery, and onion, finely diced
  • Season with Salt, Pepper, and Italian Seasoning. Let the vegetables sweat and onions become translucent.
  • Add tomato paste and mix to cook through for a few minutes.
  • Add red wine and cook out till you no longer smell alcohol
  • Add the ground beef and sausage removed from casing. Stir everything and cook through till all of the meat has turned a brownish color. Spoon out any excess fat or oil if necessary.
  • Add Passata to the meat mixture and bring it to a boil then lower the heat to reduce the sauce. This can take up to three to four hours. Stir it every so often and ladle out any excess oil as seen when it floats to the top.
  • Once sauce is ready, add a little more butter, cheese and a splash of milk is optional.

Intuitive Cooking

The first thing you will notice about this recipe is that there is no set measurements. That is because this sauce is very intuitive. Based on how much sauce you need will determine how much carrots, celery, onions, and meat you will need. Same goes with the seasonings. It is very much a taste as you go and so this is the dilemma with some of the recipes I get from family. This is one of those that you “lead a horse to water but you can’t make him drink” kind of things. But fret not mon cherie – I am working on getting the exacts.

This recipe was one I recorded over two years ago (back in 2022, it is no 2024). I have since attempted this multiple times, and each time I get closer and closer to exact measurements. It is my hope that soon, I will be able to provide the exacts for you. Stay tuned!
