Fresh Pasta Dough

Fresh Pasta Dough

A recipe for fresh pasta dough that can be used to make multiple variations of pastas.

Ingredients
  

  • 1 cup 00 flour
  • ½ cup semolina flour
  • 3 eggs
  • 2 tsp extra virgin olive oil
  • salt to taste

Instructions
 

  • Add flours to a cleaned surface and make a well in the center.
  • In the well, add eggs, salt, and olive oil. Scramble the eggs in the well.
  • Using the same fork, slowly and gradually add in flours from the wall of the well until a paste like dough is formed.
  • Then incorporate all the flour to form a shaggy dough
  • Continue to knead the dough for about 10 minutes or until a smooth ball is formed and when the dough is pressed it bounces back.
  • Cover with saran wrap and let sit for 30 minutes.
  • Divide dough into four pieces. Cover the pieces that are not in use.
  • Flatten out the section of dough that you are working. Then run through a pasta mill machine, start with a thicker setting and gradually change to the thinest setting. Each time the pasta runs through the machine, fold in the sides and run again. Make sure to use semolina flour on the machine other wise it will stick.
  • Let the pasta sit in "nests" for 30 min to an hour just to let it dry out a little.
  • When water is at a rolling boil, add fresh pasta and cook for 2-3 minutes or so. Transfer cooked pasta directly into a pan with sauce of your liking.

Okay, I have done extensive research. Watched numerous family members, tik toks, and YouTube videos. Each one is different and I have yet to come across a perfect recipe yet. The one above is as close to perfect as I have gotten but in order to be transparent and honest, I am admitting it is not perfect – yet.

Here are the other variations that I am going to test out in the future and should you be inclined to do so, share the results.

A More Exact Version

  • 150g 00 flour
  • 50g semolina flour
  • 2 eggs
  • 1 tsp olive oil
  • salt

A Large Amount Version

  • 1 cup 00 flour
  • 1 cup semolina
  • 6 eggs
  • 1 tbs olive oil
  • salt
