Sausage Tortellini Soup

Sausage Tortellini Soup

This hearty and rich Sausage Tortellini Soup is so delicious and perfect to warm you up on a cold day. It is a great way to eliminate any leftovers in your fridge too!

Ingredients
  

  • ½ yellow onion, diced
  • 1 celery, rough chop
  • 1 carrot, rough chop
  • 2 cup spinach
  • 3 garlic cloves, diced
  • 1 lb sausage
  • ½ bag frozen tortellini
  • 2 tbsp italian seasoning
  • 1 tomato bouillon
  • 1 tsp tomato paste
  • 1 box 32 oz chicken broth more if needed
  • extra virgin olive oil
  • pecorino cheese

Instructions
 

  • Saute sausage in olive oil in a large soup pot. Remove once browned.
  • In the same pot, add a dash more oil, and saute onions, celery, and carrots with the tomato bouillon
  • Add italian seasonings and garlic last to not burn
  • Add tomato paste and stir in letting it cook with the garlic for a few seconds
  • Add the chicken stock and bring to a boil.
  • When the carrots are tender add torellini.
  • Let the tortellini cook as directed on the packaging. Optional: add a splash of heavy cream to create a silkier broth
  • Add spinach close to the end of the tortellini's cooking time
  • Serve with a sprinkle of cheese on top of the soup.

How Did This Recipe Even Come About?

This Sausage Tortellini Soup is such a random recipe that ended up going viral (at least on my terms). It was not a planned meal, it was sort of just a compilation of all the ingredients I had left in my fridge and freezer. I had no idea if it would actually be good. Clearly I misjudged my proportions as well as you can see the soup is overflowing. The poor Sausage Tortellini Soup was hitting the brim! In the end though, the soup ended up being quite delicious and hearty. It had a good source of veggies, pastas, and salty meats.

There are some things I might have changed, maybe a bit less liquid because it was very soupy. I could probably omit the cream or milk, it didn’t add anything in my opinion. But overall, the Sausage Tortellini Soup was a 9/10 and great to get rid of any leftovers so you can add whatever veggies you have as long as the base of the soup is the same.
