San Francisco Vietnamese Garlic Noodles

San Francisco Vietnamese Garlic Noodles

A delicious, quick, and cheap recipe for San Francisco Vietnamese Style Garlic Noodles inspired by a trip to the Bay Area

Ingredients
  

  • 8 cloves of garlic minced
  • 5 tbsp butter
  • evoo
  • fresh or dried egg noodles
  • ½ tbsp sugar
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce (patis)
  • parmesan or pecorino cheese
  • garnish either parsley or scallion green tips

Instructions
 

  • In a large pot, set water to boil.
  • In a separate bowl, make the sauce by combining oyster sauce, sugar, soy, and fish sauce.
  • To a large wok add oil and butter. Add the garlic and sautee. The water should be boiling by now, add noodles and cook according to package directions.
  • Then add the sauce mixture to the the wok and let thicken.
  • Remove and strain the noodles and add to the sauce with a little bit of the reserved noodle liquid. Toss in the wok to ensure everything is combined.
  • Remove from the heat and add a sprinkle of cheese and add garnishing of scallions to the top.

I Left My Heart in San Francisco

San Francisco was truly a beautiful experience. I plan to blog about it soon so look forward to that. But the food scene is the one thing that San Francisco left an everlasting mark on. There is this scent illuminating the air by the piers that still is ever present in my mind. I would soon come to learn that that was the smell of what is called a “Mission Dog”. It earned its nam after the Mission district. It was this savory bacon wrapped hot dog that I was way too happy to get from a street vendor. I say that to say that there were a lot of new things we tried in San Francisco and they all stuck with me. The one that stuck the most – SF Vietnamese Garlic Noodles.

We went to a restaurant called Bodega SF and we ordered a lot of really delicious food but the one that stuck – the noodles. I ended up returning home still thinking about this dish, doing research on its origin story, and then realizing I had almost all of the necessary ingredients. So, a week after returning I found myself in the kitchen, loading the ingredients all together and failing the first try. The noodles were too dry and I didn’t make enough sauce. But, then I tried it two more times. And I think I finally got it right! So here it is, my nostalgic memory of a new and interesting flavor.
