Coffee Cake

Coffee Cake

A sweet and delicious breakfast coffee cake that warms your tummy and gives fall vibes!

Ingredients
  

Cinnamon Sugar

  • ½ cup light brown sugar
  • 1 tsp cinnamon

Streusel

  • 1 cup flour
  • 1 cup light brown sugar
  • 4 tsp cinnamon
  • ½ cup salted butter, melted

Wet Ingredients

  • 1 Cup Sour cream
  • ½ cup buttermilk

Batter

  • ½ Cup Softened Butter
  • 1 Cup white sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 2 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • powdered sugar optional

Instructions
 

Prep

  • Preheat oven to 350°
  • In a bowl, make cinnamon sugar by combing cinnamon and brown sugar. Set aside
  • In another bowl, make streusel. Combine all streusel ingredients and mix with a fork till clumpy. Set aside.
  • In yet another bowl, prep dairy mixture. Whisk buttermilk and sour cream and set aside.

Batter

  • In a stand mixer, combine sugar and butter.
  • Add eggs and vanilla and mix again.
  • Add the dry ingredients and then slightly incorporate in the mixer. Do not over mix, only turn it on for a few seconds to moisten the flour a bit.
  • Remove the bowl from the mixer and pour the milk batter in. Using a silicone spatula, slowly mix all ingredients till a thick batter is formed.

Assembly

  • In a pan (see note about my mistake), line tray with parchment paper.
  • Add a layer of batter into the pan and spread to the corners.
  • Sprinkle all of the cinnamon sugar.
  • Add another layer of batter trying not to move the layer of cinnamon sugar and spread batter evenly.
  • Sprinkle on streusel.
  • Bake at 350° for 45 minutes to an hour. MAYBE LONGER, Insert a toothpick till it comes out clean! (again read my note about my mistake!)

Well this coffee cake was one of those for me. One of my favorite instagram foodies @Zaynab_issa posted this coffee cake recipe and I needed to try it. It just so happened to coincide with my best friend sleeping over for the first time at our new house. And my besties first time watching Harry Potter. We won’t talk about how she fell asleep, but we forgive her – or do we!? Anyway, my best friend, Alyssa, also loves her some coffee cake. My sleepy girl loves all things coffee – kind of ironic! So it’s only right that I made this the day she came.

I will say though, that I will need to figure out some tweaking because the time she suggested versus the amount of time mine was in there was pretty off. It easily could of been the pan size because at one point I switched it. I originally started by placing it in a 9×13 then I switched it to the brownie square pan – I want to say 9×9 but I could be wrong. So, for that reason I cannot give you an exact time. But, I will do my best to test a few more recipes and bring you the best one because *chefs kiss* coffee cake is life.
