Easy Pumpkin Pie Pudding

Easy Pumpkin Pie Pudding

Save the hassle on Thanksgiving. Get all the taste of pumpkin pie within five minute without any of the hassle! Try this Pumpkin Pie Pudding!

Ingredients
  

  • 2 packages instant vanilla pudding mix
  • 1 can pumpkin puree (15 Oz)
  • 3 cups milk
  • ΒΌ cup light brown sugar
  • 2 tsp pumpkin pie spice + more for topping
  • whipped cream

Instructions
 

  • Mix all the ingredients (except the whipped cream) in a large bowl
  • Place bowl in fridge for up to an hour till chilled. You can also place mixture into serving ware like a cup or bowl and then chill.
  • Top with whipped cream and sprinkle on pumpkin pie spice.

Who Really Likes Pumpkin?

I might lose some of you here, but I am not really a pumpkin fan. Pumpkin lattes are just ok and pumpkin pies are a headache. Almost all the pumpkin pies I have made have cracked or for some reason get this “sweaty” look. After I put it in the fridge with saran wrap, little bubbles of condensation land and I find that awfully weird. So some years ago, I found a recipe online for pumpkin pudding. It wasn’t much of a hit because, again, not many people liked pumpkin. However, I found an even easier recipe this year for Thanksgiving, and I was not going to go out of my way to make a pumpkin pie after two days of cooking labor. So, pumpkin pudding it was.

The recipe was courtesy of Delish, a favorite recipe site of mine. Although sometimes a little bit complex, I do think they’re recipes actually come out “delish!”. It’s a short list of ingredients which most you probably will have on hand. And the best part, it takes literally like five minutes to make and then you just leave it in the fridge. It also helps that it is quite appealing to the eye once spruced up with some whip and sprinkle of spices. And truthfully, maybe because it’s easier, or maybe because it has vanilla pudding, it was really good – even for someone who doesn’t like pumpkin. The only thing I missed was the buttery crust, but it is totally fine without!

So, if you plan to host some kind of fall event like friends-giving or even thanksgiving, and want an easy, uncomplicated, mess free dessert, I would hope you could give this a try. It’s basically pumpkin pie but creamy!
