Maruya aka Filipino Banana Fritters

Maruya aka Filipino Banana Fritters

A delicious Filipino breakfast fritter pancakes that are sure to fill any sweet tooth.

Ingredients
  

  • 7-8 saba (or el nido) bananas
  • 1 cup flour
  • ½ cup sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 egg
  • ½ cup milk
  • 1 tsp vanilla

Instructions
 

  • In a bowl, mash 7-8 saba bananas.
  • In a bowl, combine dry ingredients (flour, salt, baking powder, and sugar)
  • In another bowl, beat one egg, and add milk and vanilla. Then whisk in to the dry ingredients.
  • Fold in the bananas using a spatula. Batter should be thick and not runny.
  • In a large pan, add vegetable oil and heat up.
  • Pour about 1/4 cup of the batter into hot oil and fry until golden then flip and finish frying.
  • While hot, sprinkle some sugar. Optional: in a small plate add sugar and put the fritter flipping it back and forth to fully coat.

The obsession I have with bananas is a little bananas, see what I did there! I have been searching for the instant bananas and cream oatmeal for an eternity – but nope – they only come in the variety pack. Laffy Taffys best flavor – Banana! Best bread – Banana bread! Do I need to name more? So, when my mom made me these maruya pancakes for breakfast, I became heavily infatuated and I made them consistently for about a week. The obsession remains but it pretty unhealthy to eat these everyday so now they are a twice a month treat. Maruya is very similar to fritters but instead of apple they are bananas. And they are AMAZING.
