Dominican Pink Potato Salad

Dominican Pink Potato Salad

A delicious Dominican Style potato salad known as "pink potato salad" for its color from beets and also sometimes called ensalada rusa.

Ingredients
  

  • 4 potatoes
  • 2 carrots
  • 2 eggs
  • 1/2 red onion
  • 1/2 c vinegar
  • 1 tbs salt
  • 1 cup mayo
  • 1/2 can beets and some reserved beet juice

Instructions
 

  • to boiling water add largely cut potatoes and carrots 20 min
  • add eggs 10 more min do not overboil the carrots or potatoes they should be fork tender but not mush
  • dice onion and add to a bowl with salt and vinegar let sit
  • dice the boiled potatoes and carrots
  • add the onions and some of the vinegar
  • add beet juice
  • add beets and mayo and more salt if needed

A Pink Potato Salad?

Yes! Try not to be deterred by the color of the potato salad! The pink potato salad gets its color from beets and the red onion offering a pink tint that is absorbed by the starch, eggs, and mayo.

When I was a mere teenager, a vibrant plate of Pink Potato Salad first caught my eye at my Dominican best friend’s “rooftop” barbecue – a New York City summer scene staple. Initially, the salad’s rosy hue made me hesitate; but once I tasted it, I never stopped requesting it.

Luckily for me, my best friends mom was always welcoming. I was practically part of the furniture at her house. Her mother, generous to a fault, would cook extra just for my cousin and I, knowing our voracious appetites would make short work of any cold cuts within reach. (Side Note: Thank you Maritza, te amo!) She started calling us “the girls” as our trio became solidified.

Introduction to Obsession

On that particular day there was the sound of a bustling Brooklyn around us. The aroma of grilled chicken mingling with sazon seasonings filled the air and I was presented with the blush-tinted potato salad. Skeptical, I gave it a chance, allowing it to merge on the plate with the rice. The combination had me hooked. The result was nothing short of a culinary revelation – a flavor explosion that transformed skepticism into a lasting obsession. The experience was a testament to the fact that we should never judge a dish by its color. Taste is where the true surprise lies, and the Pink Potato Salad is a dish that continues to captivate my senses to this day.

I eventually started dating a Dominican man, and much like my best friends mom, his mom is an extraordinary cook. She too makes the pink potato salad, and everytime she makes it, my boyfriend brings home a little aluminum foil pack with just enough pink potato salad to sustain me (Side Note: Gracias Martha, te amo tambien <3).

It is truly a favorite of mine. So, I thought I would try and recreate the deliciousness these moms have created for me. While I will admit it is not exactly like any of theirs because I feel like something is missing. I still think I did quite a good job for a non-latina girly.
