Avocado Toasty
Ingredients
- 1 Avocado
- 5 cherry tomatoes
- 2 pieces of toast (I prefer Semolina)
- Chili Lime Seasonings (or Tajin)
- Salt and Pepper
- 1 Garlic Clove
- ½ Lime
- olive oil
Instructions
- Toast your bread.
- Open the avocado by slicing along one side and twist to separate. Remove pit and scoop out the avocado with a spoon.
- Add the avocado to a bowl with a squeeze of lime, salt, pepper, and chili lime seasoning. Mash together
- To the toast, use a garlic clove to scrape against the toast (optional)
- In another bowl, cut tomatoes in half and add salt, pepper, and olive oil.
- Assemble your toast – add avocado mash, top with tomatoes.

Becoming an Avocad-HOE
Yeah, I said it! Prior to about three weeks ago, I absolutely hated avocados. It’s the texture folks. It just wasn’t for me. Especially since every time I have attempted to eat it, it has been plain served alongside Spanish food that my boyfriend was eating. I was not a fan.
Then my mother made me breakfast one morning. Now, I want to preface this by saying my mother is not a great cook, so for her to make something and I completely devour it, well it had to have been really, really good. I asked her how she made it and then on my way home from work, I scooped up the ingredients. I have had it almost every morning since then, give or take a few weekends and late for work days.
The star of the show here was not the avocado though, and that is why I think I adore it. For me, its that seasoning, which you can use either tajin or chili lime from Trader Joes and those olive oiled tomatoes whose sweetness is enhanced with salt and pepper. I know some people prefer everything bagel seasoning, but those seeds always stick to my teeth and its a hassle to get them out while driving!
Since becoming a lover of the avocado, I have found a couple of new variations that add even more flavor. If you toast your bread to a crispy consistency, you can scrape a garlic clove onto the toast for some extra garlicky flavor – I learned this trick from Spain. Also, topping the toast with either cotija cheese or ricotta salata really adds some depth and makes it an even fancier toasty.
