Instant Pot Pot Roast

Equipment

  • Pressure Cooker

Ingredients
  

  • Chuck roast
  • Adobo con sazon
  • Paprika
  • Dominican oregano
  • Cumin
  • Onion
  • Garlic powder
  • Garlic pepper
  • Lawrys salt
  • Butter
  • Celery
  • Onion
  • Garlic
  • Better than bouillon beef
  • Tomato paste
  • Worcester sauce
  • Garlic paste
  • Chicken bouillon

Instructions
 

  • Season beef on all sides
  • Add to instant pot saute on all sides for browning
  • Remove set aside
  • Add butter and olive oil
  • Sautee onions and celery
  • Add smashed garlic cloves
  • Add bouillon and tomato paste
  • Add worcester sauce, garlic paste, and bouillon powder
  • Add the beef back and add stock
  • Add au jus gravy
  • Set Pressure Cook High 1 hour 15 minutes
  • Remove the meat, Add potatoes (optional if serving with mash) and carrots
  • Pressure cook High for 8 Minutes, Meanwhile shred the roast.
  • If the broth is too liquidy, you can change the setting to saute and add a cornstarch slurry, add brown gravy or slow cooker beef stew.

Instant whaaaaa?

I am always the first to admit that I love kitchen gadgets, but I do not always use them as frequently or as correctly as I should. When I first bought my house, I had left a one bedroom Brooklyn apartment with nearly zero cabinet space, to this overwhelmingly large (subjective to my opinion) kitchen. I was in awe with how many cabinets I could fill. I immediately thought of all the gizmos and gadgets I could by. And then I bought them, filled the cabinets and now have zero space – so! Anywho, one thing that I bought that takes up the entire cabinet – this Instant Pot Multi-Use. It is massive, but I told myself – look at how much I an do! It’s an air fryer, a pressure cooker, a sauté thing, and honestly, that is all I really know it does lol!

A Sunday Roast

In London, Sunday Roasts are their version of what I compare to an Italian Sugo Sunday. But theirs is comparable to a Thanksgiving feast. I have always been obsessed with that old school episode of Jamie Oliver when he makes the Yorkshire puddings, the roast, and all the fixings. But large pieces of meat always intimidate me, pause for childish laughter, and so when I bought this Instant Pot, I said – meat don’t stand a chance! In comes a pressure cooked instant pot roast here to cut time in half without skimping on any flavor. It took me a few tries, but I think I got it right this time.

To Mash or not to Mash, that is the question. So when I made this the first few times, I noticed that this roast goes perfectly with mashed potatoes, however, since there were already potatoes in it, it was a little heavy. So going forward, I will probably only put a couple of little baby potatoes, or just omit them all together and opt for just the mash.

To each his own as well, so if you prefer more taters, go for it!
