Maruya aka Filipino Banana Fritters
Ingredients
- 7-8 saba (or el nido) bananas
- 1 cup flour
- ½ cup sugar
- 1 tsp salt
- 1 tsp baking powder
- 1 egg
- ½ cup milk
- 1 tsp vanilla
Instructions
- In a bowl, mash 7-8 saba bananas.
- In a bowl, combine dry ingredients (flour, salt, baking powder, and sugar)
- In another bowl, beat one egg, and add milk and vanilla. Then whisk in to the dry ingredients.
- Fold in the bananas using a spatula. Batter should be thick and not runny.
- In a large pan, add vegetable oil and heat up.
- Pour about 1/4 cup of the batter into hot oil and fry until golden then flip and finish frying.
- While hot, sprinkle some sugar. Optional: in a small plate add sugar and put the fritter flipping it back and forth to fully coat.

The obsession I have with bananas is a little bananas, see what I did there! Do I need to name more? So, when my mom made me these maruya pancakes for breakfast, I became heavily infatuated and I made them consistently for about a week. The obsession remains but it pretty unhealthy to eat these everyday so now they are a twice a month treat. Maruya is very similar to fritters but instead of apple they are bananas. And they are AMAZING.
