Raspberry Almond Sugar Cookies

The most delicious and perfect sugar cookie cut out recipe you will ever use with a light flavor of raspberry.

Ingredients
  

  • 1 cup salted butter room temperature
  • 1 cup sugar
  • 1 egg
  • 1 tsp raspberry extract
  • 1 tsp almond extract
  • ½ tsp raspberry preserves
  • drop of raspberry oil
  • 3 cups all purpose flour
  • tsp baking powder

Instructions
 

  • In a stand mixer with paddle attachment, cram 1 cup salted butter room temperature and 1 cup sugar
  • Add 1 egg, 1 tsp raspberry extract, 1 tsp almond extract, ½ tsp raspberry preserves , and drop of raspberry oil
  • Mix dry ingredients (3 cups all purpose flour and 1½ tsp baking powder) together first then gradually add into the mixer.
  • Remove dough and roll out between parchment paper into 1/4 of an inch thick
  • Transfer the dough to the fridge and let harden for 10 minutes.
  • Remove and use cookie cutters of desired shapes. Place cut cookies back into the fridge for 20 more minutes (up to an hour) so that the butter holds. This will help to retain its shape.
  • Bake at 350° for 8-10 minutes.
  • Once out of the oven, graze the tops lightly with a flat edge like a spatula to make for a more even cookie. Be very gentle as these are very delicate while hot.
  • Be sure to let cookies cool completely before icing.

There was a point in my life that I fully believed I would own a bakery or restaurant of some sort. I started to make and sell decorated sugar cookies and I truly loved it. I stocked up on so many supplies and was fully invested in it. That was, until it became too much work for not enough money – isn’t that the common theme for all work anyways! What I mean with that is that the designs were becoming more intricate, the time spent decorating each cookie, painting gold, packaging, and then delivering, well it became consuming. Especially after working a 9-5 job to come home and do it was just overwhelming.

With all that being said, making sugar cookies now, when it isnt pressured to a time constraint and perfection, when its just for my family or my loved ones is a lot less stressful and still fun when I want to get those artsy juices flowing. But I completely encourage you to at least try to make a decorated cookie, and if you do, this is the recipe you need.

Royal Icing

Ingredients
  

  • 2 lb Powdered Sugar
  • 4 Tbs Merengue Powder
  • 1-2 Tsp Vanilla
  • 1-2 Tsp Almond
  • Cup water add more for desired consistency

Instructions
 

  • In a stand mixer, add water and extracts.
  • Sift in Powdered sugar and mix on low for about 10 Min.
  • Divide icing into bowls to add more water for different flood consistencies and gel coloring.
